Great new spot and take on breakfast sandwiches! Definitely worth a stop on your way to work or if you are in town visiting. Its very close to the soccer stadium and olympic museum, just off I-25. They have ample parking and seating.

We tried two sandwiches (bacon and spam), the egg lush tots, an ube matcha and a strawberry matcha. Everything was delicious, hot and fresh. The sandwiches are in a perfect toasted brioche pocket then filled with egg and whatever you order. The bacon and spam we had were both cooked wonderfully. The tots were pretty large for what I expected. .

The service was quick and clearly from a staff who cares about your experience. They checked in with us about the food, we had a slight mix up, but they were more than accommodating and very quick make sure everything was correct. .

Egg Lush just rocketed to the top of my Colorado Springs breakfast list. The matcha is out of this world. I’m pretty sure they channeled it straight from some zen mountain. Perfectly smooth, not too sweet, and honestly… I’d go back just for that.
But the real star? The Bulgogi burrito. Hands down one of the best burritos I’ve ever had. Packed with flavor, super comforting, and dangerously addictive. It’s the kind of burrito that makes you question every life decision that led you to eat anything else for breakfast.
Service was friendly, the vibe was great, and I’m already plotting my next trip back. If you’re in the Springs and not going to Egg Lush, you’re messing up.
